recipe: a tasty new TUNAfish dish

I was bumbling around in the kitchen today and was struck with a sudden wave of culinary creativity. this NEVER happens to me so I decided to grab the bull by the horns, so to speak, and see what sort of concoction I could come up with.


I have a pretty simple palate, meaning I could eat the same thing every day and be perfectly content, for the most part. but sometimes a girl needs to add a little spice to her life, you know!? so here's what I came up with: a (super easy, super affordable, super quick) tunafish dish.


I love tunafish. growing up there was nothing better than a tuna melt - gooey tunafish on an english muffin topped with a slice of tomato and melted cheese. but a degree in nutrition and a dairy allergy later I have to find innovative ways to make my tunafish a little healthier. My grandmother used to say, "the secret is in the mayonnaise, the more there is the better it tastes." I'm here to tell you that the secret is NOT in the mayo. this is 2013 people. obesity is a BIG freaking (totally preventable) epidemic. make healthier choices!!!


so here it is:

- 2 (5oz) cans of Bumblebee white chunk tuna in water

- 3 stalks of celery

- 3/4 c. of red pepper

- 1/2 c. sweet corn

- 1/2 avocado, mashed

- 1 TBSP. of chilli powder

** add hot sauce to taste (if you're into that sort of thing)


Drain tuna and mix all your ingredients together in a tupperware container. Enjoy and refrigerate leftovers!





I personally like adding it to a bed of spinach and topping it off with a drizzle of EVOO and balsamic vinegar. you could also put it inside a whole wheat pita. SO easy and SO delicious. it's tuna with a kick! I whipped it up in a matter of minutes and stuck it in my fridge for those days when there's only a few quick minutes to grab lunch or throw something together to take to work. the best part about it is you can mix in any variety of veggies you need to use up. banana peppers, onions, and even cucumbers might be yummy to add to the mix.
